Here are a few hints from the Kaminski Kitchen:


  1. Measuring is often over rated, eye balling is good.
  2. I often double the sauce quantity- some for dipping, some for more flavor, some because I added extra meat, veggies, or other ingredients.
  3. I do most of my stovetop cooking in well-seasoned cast iron skillets.  I steam veggies on the stovetop in a stainless steel stockpot or saucepan.  Avoid non-stick cookware like the plague…. It releases toxins at high temperatures (aka cooking temperatures).  These toxins called toxins because they are really really bad for you and your family.
  4. Don’t forget about nuts!  They make great additions in salads and as other alternative ingredients.
  5. Leave the cheese and try avocado!  Especially in those Mexican dishes.  The cost is the same….
  6. I do a ton of chopping.  One of my favorite kitchen tools is my Pampered Chef food chopper.  Like a food processor, but chef powered.  (aka by hand).  A good sharp set of knives is also a must.  My favorite is a small santoku knife, and Drew prefers the heavy duty Pampered Chef forged cutlery.
  7. So many mainstream recipes can be modified.  Leave the starch, and increase the veggies.  Or, reduce the dairy by sometimes half!
  8. Don’t be afraid to experiment.  Just don’t start with your pan on high!  You can always increase the heat (unless the recipe calls).  
  9. Kids in the kitchen?  Increase the cook time, turn your heat down to prevent a burnt meal. 
  10. This one I have yet to master: Chop your veggies for your supper recipe during naptime.  It really does help.  Oh, if your husband comes home for lunch, put him to work!
  11. Don’t forget to thaw your meat ahead!  I meal plan on Sundays and pull out most of my meat for the week so its ready to go in the fridge.
  12. We cook with a lot of grass fed beef and venison.  Depending on the cut and how the beef was ‘finished’ sometimes cooking to obtain good flavor can be a challenge.  In these cases, don’t skimp on the butter.  It’s a great way to add some fat and flavor back into the meat, and because most of the butter remains in the pan, no need to worry about ingesting it.  Although I don’t mind…..
