This quick lunch is yummy over a bed of lettuce or in a wrap. If I don’t have all the ingredients on hand, I use what I have and it still tastes good. The starred ingredients are the essentials.
- *Chicken, chopped (leftovers, or canned white meat)
- *Cashews chopped (maybe a ½ cup)
- *Ranch Dressing (we like Litehouse ranch – in the refrigerated section, seems to be the healthiest choice)
- *1 Apple, chopped
- celery
- grapes, halved
Mix chicken, apples, cashews, grapes and celery in a mixing bowl, and then add a little dressing just until moist. Enjoy! (I try to make enough of this only to eat at one time, as the leftovers don’t keep too well – in my opinion).
As for the chicken. We’ve used leftover baked chicken (white meat) and finely chopped. Or the canned all white meat chicken from the store…
